Ingredients

  • ½ cup rice
  • 2 cups full-fat milk
  • ½ cup water
  • 2-3 tbsp sugar, adjust to taste
  • 2-3 cardamom pods, crushed
  • 1 tbsp chopped almonds
  • 1 tbsp chopped cashews
  • 1 tbsp raisins
  • 1 tsp ghee
  • A few strands of saffron (optional)

Instructions

    Wash the rice 2-3 times and soak for 15-20 minutes.

    Heat 1 tsp ghee in a heavy-bottom pan and lightly roast the drained rice for 1-2 minutes.

    Add ½ cup water and cook until the rice is about 70% done.

    Add 2 cups milk and bring it to a gentle boil.

    Cook on low-medium heat for 15-20 minutes, stirring occasionally so the milk doesn't stick.

    Once the rice becomes soft and the milk thickens, add sugar and cardamom.

    Add almonds, cashews, raisins and saffron.

    Simmer for another 3-5 minutes.

    Serve warm, or chill it for a thicker, dessert-like version.
