Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups fresh spinach, chopped
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tbsp olive oil
  • 4 cups vegetable stock
  • Juice of half a lemon
  • Salt and pepper to taste

Instructions
