Ingredients
- 1 cup red lentils, rinsed
- 4 cups fresh spinach, chopped
- 1 onion, finely diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 tbsp olive oil
- 4 cups vegetable stock
- Juice of half a lemon
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot and sauté onion until soft.
